Hooters Buffalo Chicken Wings (Deep Fryer needed)

Unread post by Grubb Industries »

This is from a book called "Stolen Restaurant Recipes", it is the actual recipe that is used by Hooters.

Batter
1/4 cup butter
1/4 cup Crystal Louisiana hot sause, or any hot similar hot sause
dash ground pepper
dask garlic powder
1/2 cup all purpose flour
1/4 teas. paprika
1/4 teas. cayenne pepper
1/4 teas. salt

Sauce
Combine the butter, hot sauce, ground pepper, and garlic powder in a small sauce pan over low heat. Heat until the butter is melted and ingredients are well-blended

does aprox 10 wings, double if needed.

Heat Oil in a deep fryer to 375, with enough oil to cover wings
combine flour, peprika, cayenne pepper and salt in a small bowl
be sure to defrost wings and put in large bowl, sprinkle wings with the flour mixture coating entire wing. refigerate wings for about an hour, this helps the flour stick to the wings when they are fried.
put wings into deep fryer for 8 - 10 min.
I wait till the boiling slows down meaning the moisture is gone from the wing.
when cooked remove and drain.

Add wings to sauce, cover and shake in sauce pan to evenly cover wings.

You'll have to get your own Hooters girl to server them to you.

good luck
