NUKER'S Favorite Christmas Cookies

OK DOU Brothers & Sisters the best time of the year is coming, CHRISTMAS!!! Here are 5 of my FAVORITE Cookie recipes for CHRISTMAS!!! I hope you enjoy them as much as I do!!!

I always double this one so there are enough to go around!

1) NUKER'S MOLASSES COOKIES

Serving Size : 12 Preparation Time 0:30
Categories : Desserts

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3/4 cup shortening
1 cup sugar
1/4 cup molasses
1 egg
2 teaspoons baking soda
2 cups flour
1/2 teaspoon ground cloves
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt

Melt shortening; let cool. Add sugar, molasses and egg. Beat well. Sift together dry ingredients. Add to fist mixture. Mix well; chill. Form into 1" balls, roll in granulated sugar and place on greased cookie sheet about 2" apart.

Bake at 375 for 8-10 minutes.


2) SUPER NUKER'S CHOCOLATE CHIPS

4 ½ cups All Purpose Flour
4 Eggs
2 Cups Butter (Softened)
2 Teaspoons Baking Soda
1 ½ Cups Packed Brown Sugar
½ Cup White Sugar
2-3.4oz pkgs. Jello Instant Vanilla Pudding Mix
2 Teaspoons Vanilla
4 Cups Semisweet Chocolate chips

Preheat oven to 350 F.
Sift together flour and baking soda and set aside.
Cream together butter, brown sugar, and white sugar and then blend in the instant pudding mix until well blended.
Stir in the eggs and vanilla.
Slowly blend in the flour mixture.
Stir in the chocolate chips.
Drop cookies by rounded spoonfuls onto ungreased cookie sheets.

This next recipe came from my mother's mother and probably beyond (Over 100 years). I am 100% Italian and my roots go back to ITALY (The Motherland) on both sides of the family. In other words WE KNOW PIZZELLES!!!

3) MOMMA NUKER'S PIZZELLS

8 Large Eggs
1 ½ Cups Sugar
3 ½ Cups Flour (Sifted)
¼ Pound Butter
½ Cup Oil
The Zest of 1 Whole Lemon (Make sure it has a thick skin)
¼ Teaspoon Anise Oil (Anise Oil is VERY Strong be Very Careful)
OR
Vanilla Flavor (Vanilla to taste ½ tsp to 1 tsp)

Directions

Cream together Eggs & Sugar
Then add Butter & Oil
Then add the Lemon Zest
Then add EITHER the Anise Oil OR the Vanilla
(If you choose the Anise Oil PLEASE use caution and add less than is called for & taste the batter then add more to your taste.)
Slowly add the flour until and mix well.

These next two cookies are fantastic but I at least double the batch.

4) Death by Chocolate Cookies

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 8 oz pkg Baker's Semi-Sweet Baking Chocolate -- divided
3/4 cup firmly packed brown sugar
1/4 cup butter or margarine
2 egg
1 teaspoon vanilla
1/2 cup flour
1/4 teaspoon baking powder
2 cups chopped nuts -- optional

Heat oven to 350. Coarsely chop 8 squares (1 pkg) of the chocolate; set aside. Microwave remaining 8 squares chocolate in large microwavable bowl on high 1-2 inutes. Stir until chocolate is melted and smooth. Stir in sugar, butter, eggs and anilla. Stir in flour and baking powder. Stir in resered chopped chocolate and nuts. Drop by 1/4 cupfuls onto ungreased cookie sheet. Bake 12-13 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheet 1 minute. Transfer to wire rack to cool completely.

Makes about 18 cookies.

NOTES : Use 16 ounces semi-sweet chocolate chunks in place of baker's chocolate. Divide in half; melt as in beginning of recipe and use other half of bag for the chips.



5) Death by White Chocolate Cookies


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pkg BAKER'S Semi-sweet baking chocolate -- (8 squares)
3/4 cup firmly packed brown sugar
1/4 cup butter or margarine -- softened
2 eggs
1 teaspoon vanilla
1/2 cup flour
1/4 teaspoon baking powder
1 package BAKER's White Baking Chocolate -- (6 squares)
2 cups Chopped Macadamias or Slivered Almonds

Heat oven to 350. Microwave semi-sweet chocolate in large microwavable bowl on high 1- 2 minutes. Stir until chocolate is melted and smooth. Stir in sugar, butter, eggs and vanilla with wooden spoon until well blended. Stir in flour and baking powder. Stir in white chocolate and nuts. Drop by scant 1/4 cupfuls onto ungreased cookie sheets. Bake 13-14 minutes or until cookies are puffed and feel set to the touch. Cool 1 minute; remove from cookie sheets. Cool completely on wire racks. Makes about 18 large cookies.

NOTES : Use 1 cup semi sweet chocolate chips in place of baking chocolate and 1 cup white chocolate morsels or chunks in place of white baking chocolate. If omitting nuts, increase flour to 3/4 cup to prevent spreading. Makes about 15 large cookies.

I made mine smaller than 1/4 cupfuls & yielded more than 18 cookies.

Thank you very much Nuker... I love cookies... :D

You forgot to include the preparation method of your momma's Pizzells...

For such a mistake you could get a good spray of bullets...

But I am full of Christmas spirit so this time I will forgive you... :mrgreen:

Thanks for the recipes Nuker. They seems to be tasty. Now I must translate that all into polish including ingredients and US units of measurement. This should be fun. :lol:
