Grubby Ribs

I cook them in a large pot, but you can also cook them in the oven at 325. i just find it easier to keep them immersed in the sauce and don't have to keep basting them, I always double or triple this if I'm doing a large amount, better to keep them mostly covered in the sauce.

3 - 3 1/2 lbs. of back ribs - you can use sided ribs but they are more fatty, i cut them down to 1 or 2 ribs with a sharp knife you can make them bigger if you want, be sure to count your fingers afterwards.

2 tablespoons olive oil (or any kind)
1/2 cup of chopped onions
1 clove Garlic chopped fine or crushed
1/2 cup of honey
1/2 cup ketchup
1/2 cup of Vinigar - or Lemon Juice
1/4 cup Worchester sauce
2 teaspoons dry mustard (you can use hot)
3/4 teaspoon salt
1/2 tsp dried basil
1/4 tsp oregano
1/4 tsp pepper

combine oil, onions and garlic in pot cook at med until soft
stir in everything else and bring to a light boil for 5 min.
add ribs carefully and cook at med - high bringing back to light boilfor about 20 min.
DO NOT COVER POT - The sauce must reduce. turn down to med after 20 min, they will take about 45 - 60 min to cook.
stir often and skim the fat off the top with a spoon or use a baster.
