Sweet And Sour Carrots

This one was requested by TKay. They are really good.

1 lb. carrots cleaned and sliced
1/4 cup red vine or cider vinegar
1/4 cup brown sugar
1 tbsp butter
1/3 cup chopped pecans
1 tbsp chopped fresh parsley

Cook carrots covered in lightly salted water 7 to 9 minutes or until just tender. Drain.

Add vinegar, brown sugar, butter and pecans. Cook and stir until well coated.

Sprinkle with parsley just before serving.

You can omit the pecans if you want.

Nice one !
I sometimes cook carrots in a chinese way... close to your recipe !
But you need a Wok and you cook everything inside it.

Put your Wok onver medium heat.
When it's warm pour 2 soup spoons of olive oil (or any king of vegetal oil) into the wok, add 1 inch of sliced ginger and stir one minute.
After that put your very thin sliced carrots into the wok and don't stop to stir.
three minutes later, add 1/4 cup of brown sugar
stir for two more minutes and deglaze with 1/4 cup chinese cooking wine (I buy Shao Xing wine in chinese shops) and add one soup spoon of black rice vinegar and a soup spoon of soy sauce. Stir again during 5 minutes.
Slice a red chili pepper and put it inside for the last minute (if you like it hot)... that's it !

You can eat those carrots in a chinese sweet and sour noodles soup.
