Baked Salmon with brown sugar marinade

I made this for New Years Eve dinner. It was a big hit with many compliments.

You'll need these:

1 1/2 pounds salmon fillets

lemon pepper

garlic powder

1/3 cup soy sauce

1/3 cup brown sugar

1/3 cup water

1/4 cup olive oil

Season your fillets with lemon pepper and the garlic powder. Just a light dusting of both should be fine.

Then mix together in a small bowl the soy sauce, brown sugar, water and olive oil. Mix well till sugar is dissolved (I know water and oil don't mix, but try anyway).

Now put the fish in an airtight plastic container (like a Tupperware thing, or even a heavy duty ziploc bag would work) and pour the mix over the fish so the fish is all covered in it. Now seal it up and put that in the fridge for at least 2 hours but longer is better.

So preheat the oven to around 350F. Put the salmon in your pan (special fish baking dish is best if possible) and pour some marinade over it (maybe to .25 inches in the bottom).

Bake for about 15 minutes or until fish flakes apart easily with your fork.

Hmmm, I just happen to have some fresh, well was fresh but now frozen, Lake Michigan salmon in my freezer. May have to try this

This is the dish I use to bake/broil my seafood. I believe it's glazed clay. Really heavy. Nice even distribution of heat and easy cleanup!

Finland πŸ˜› That's where mine was made.

Really though, anyplace that has a large selection of ceramic ware. If you have a specialty cooking shop nearby I'd start there. Otherwise just check the cooking sections of the bigger department stores.
